It all begins with an idea.
It has been a long time coming…and it is a story worth sharing. AT LEAST WE THINK SO!
We, Bruce and Lynda, met 10 years ago, a second chance for both of us. Our first date started at Toast in Port Jefferson (2 1/2 hours over a single cup of coffee), then moved to a meandering ride East, stopping at Paumonak Vineyards and enjoying a sweet bottle of wine (purchasing a bottle to go!), then driving to Magic Sundae, perhaps Long Island’s best ice cream shoppe and then onto the Mt. Sinai Diner where we split a tuna melt and sweet potato fries. So, from the inception of our relationship, after an 8-hour first date, food was at the heart of our connection.
Since then, we have brainstormed, researched, investigated, travelled, and eaten our way across many parts of the country to bring Long Island a new, innovative, and delicious food choice.
Once we were introduced to Kolaches, while looking for a unique franchise to retire to, we were all in. We hopped on a plane and spent a week in Austin. We travelled to more than 10 locations along the “Kolache Trail” as it is known in Texas, to taste, smell, and experience authentic Kolaches. We met with and spent an entire day with the Kolache Queen of Austin, Amelis of Kerlache BBQ. She showed us the ropes, what she does, and how she does it. We still speak regularly and hope she comes and tries OUR New York Kolaches.
We hope to introduce, teach, and win Long Island over, one Kolache at a time (or two, or three!) More research was needed!
We returned to Texas, specifically to Houston, to continue our research and sampling. We traveled to West, the mecca of Kolaches, and spoke with more owners, bakers, and met with the fourth-generation family members who have preserved and improved secret recipes while employing painstaking processes to continue making delicious pastries. We travelled to Galveston, where in the mid-1800s, many Czechoslovakian immigrants came to the United States and settled in mid-Texas. We walked in their footsteps.
We returned to New York with a plan, a resolve, and a dream. It all began with an idea.
